      1 lb Alligator meat -- chop
      1    Egg
      1 tb Onion -- chop fine
      2 tb Celery -- chop fine
      1 tb Parsley -- chop fine
      2 tb Shallots -- chop fine
      2 ts Lemon pepper
    1/2 ts Salt
    1/4 c  Bread crumbs
           Flour to dredge
      1 c  Cooking oil
 
  Mix all ingredients, form into 1" balls. Allow to set for 1 hour.
  Dredge with flour and fry until brown. Serve hot. Source: Louisiana
