Title: Whole wheat muffins

Yield: 12 Servings
1 c Unbleached white flour
1 c Whole wheat flour
1/4 c Sugar or less or none
2 ts Baking powder
1/2 ts Baking soda
2 ea Egg whites
1 c Non-fat buttermilk
1/4 c Canola oil
Preheat oven to 400 degrees. Thoroughly mix flours, sugar, baking
powder and baking soda. Form a well and add egg whites, buttermilk
and oil. Stir only until dry ingredients are moistened. Fill lightly
oiled or paper lined muffin tins about 2/3 full. Bake for 25 minutes
or until done. VARIATIONS: Add blueberries,apples, raisins or dates.
Serve warm. Makes
12 muffins.
