      Title: Creole sauce

      Yield: 1 Servings
 
      1 tb Vegetable oil
      1 lg Onion, chopped
      2 lg Ribs, celery, chopped
    1/2 c  Chopped green peppers
      2    Cloves, garlic, crushed
 28 1/2 oz Stewed tomatoes
    1/4 c  Dry red wine
    1/2 ts Each, thyme, oregano, basil
    1/8 ts Each, pepper, red & black
 
  In a sauce pan, over medium high heat, heat oil: add onion, celery,
  green pepper, and garlic. Cook about 6 minutes. Stir frequently. Add
  stewed tomatoes, wine, tomato paste and seasonings. Bring to a boil.
  Reduce heat to low and simmer for 30 minutes, uncovered. Stir
  occassionally. Cook untl thickened. Per 1/4 serving: 32 calories, 1 g
  protein, 1 g fat, 6 g carbs, 161 mg sodium, 0 mg chol.
