      Title: "stovies" (scottish skillet potatoes) **
 Categories: Vegetables, Famfavorite
      Yield: 6 Servings
 
      2 tb Bacon fat, butter, margarine
      6 md Potatoes, sliced 1/4" -
           With skins on
      2 md Onions, sliced
    1/2 ts Pepper
    1/4 c  Snipped parsley
    3/4 c  Water
    1/4 ts Salt
 
  In a large skillet, melt fat and coat bottom and sides of skillet.
  Layer half the potatoes and onions, then sprinkle with half the salt,
  pepper and parsley. Repeat with remaining potatoes and spices. Add
  water. Bring almost to a boil. Cover and reduce heat to low. Simmer
  for about 30 minutes or until potatoes are tender and water is mostly
  absorbed. If water is absorbed before potatoes are tender add a
  little more water.
