2 T Butter or bacon fat
3/4 c Rice
1/2 c Chopped green pepper
1/2 c Chopped onion
1 Garlic clove
1 cn VEG-ALL Mixed Vegetables
-(16 oz)
1 cn Stewed tomatoes (16 oz)
1 cn Chicken broth (12 oz)
1 cn Tuna, flaked (12.5 oz)
1/2 c Shredded cheddar cheese
1. Heat fat in skillet. Add rice, green pepper, onion and garlic;
cook 5 minutes.
2. Drain VEG-ALL.
3. Combine rice with stewed tomatoes and chicken broth. Bring to boil,
cover and simmer until rice is cooked, about 25 minutes.
4. Stir in tuna and vegetables; sprinkle cheese over top. Heatt until
cheese is melted.
