      Title: Island sweet potato pudding

     12 oz Cooked sweet potatoes;
           -peeled and cut in chunks
      1 md Ripe banana; mashed
      3 ts Brown sugar; firmly packed
      2 tb Reduced calorie margarine; +
      2 ts Reduced calorie margarine
    1/4 ts Ground nutmeg;
      1 ts Rum extract;
      1    Egg white;
  Preheat oven to 350. In a large bowl, beat all ingredients except egg
  white until smooth. Add a small amount of water if necessary, to get
  a smooth consistency. Beat egg white until stiff. Fold gently into
  sweet potato mixture. Spoon into a casserole that has been sprayed
  with a nonstick cooking srpay. Bake, uncovered, 45 to 50 minutes,
  until lightly browned.
  Per serving: 3g protein, 4g fat, 28g carb., 147mg sodium, 0mg chol.,
  174 calories.
