1/4 c Boiling water;
1/2 c Raisins;
1 sm Orange;
9 ts Sugar;
1 Egg white;
1 ts Vanilla extract;
2 1/2 ts Vegetable oil;
1 c Flour; minus
1 tb Flour
1/2 ts Baking powder;
1/2 ts Baking soda;
1/8 ts Salt;
1/2 ts Ground cinnamon;
1/4 ts Ground nutmeg;
1/4 ts Ground ginger;
Preheat oven to 325. Pour boiling water over raisins in a small bowl;
set aside. Grate the orange, saving the rind. Peel off and discard
the white membrane. Cut up orange pilp. Place orange pulp, raisins
and water in blender, blend just until raisins are chopped, not
pureed. In a large bowl, combine raisin mixture, orange rind, sugar,
egg white, vanilla and oil. Mix. Add flour, baking powder, baking
soda, salt and spices. add to wet ingredients, stirring until
moistened. Place batter in a 4X8 loaf pan or one that has been
sprayed with a nonstick cooking spray. Bake 25 minutes until lightly
browned. Cool in pan 10 minutes then remove to rack. Serve warm or
cool
