      Yield: 4 Servings
      3 lb Chicken, whole
           Salt and pepper -- to taste
      1    Orange -- quartered
      2 ts Mustard powder
      2 tb Apricot jam
      2 tb Soy sauce
      1 tb Water
      2 ts Cornstarch
  Pat chicken dry inside and out. Sprinkle cavity with salt and pepper.
  Insert orange quarters. Tuck wing tips behing back and tie legs
  together with string. Pat mustard over chicken. Combvine jam with soy
  sauce; brush over chicken.  Place breast side down on rack or invert
  saucer in greased 11 x 7 baking dish. Cover with waxed paper and
  microwave at HIGH for 10 minutes. Turn chicken over; bast with pan
  juices. Microwave at MEDIUM for 20 to 30 minutes or unitl juices run
  clear when chicken is pierved with fork, basting and rotating dish
  twice. Transfer to serving platter. Cover and let stand 10 minutes.
  Strain pan juices into 2 cup measure; skim off fat. Blend water with
  cornstarch; stir into juices. Microwave at HIGH for 1 to 2 minutes or
  until thickened and smooth, stirring once. Makes 4 servings.
