1/4 c Minces onions
1/4 c Butter
1/4 c Flour
2 c Broth
2 c Milk
1 Carrot; sliced very small
1 Celery stalk
Salt & pepper
3/4 c Grated cheese
1 md Potato peeled & diced
Melt butter & brown onions lightly over low heat. Add flour stirring
continuously. Add broth & milk or only milk + herbs. Bring to a slow
boil, put in food processor, bring back to stove then slowly add
cheese until cheese melts stirring continuously. Sprinkle with
paprika & croutons. Serves 6 portions. Friar Bob, The MONKS'
