      Yield: 8 Servings
 
      1 lb Cheddar cheese,sharp
  1 1/2 c  Pecan halves,grated
      2 tb Onion,grated
      2 tb Milk
    1/4 ts Black pepper
      1 ds Cayenne pepper
    1/4 c  Mayonnaise*
           Strawberry preserves
 
  * - or sufficient to bind mixture.
  
  1. Grate cheese into a large mixing bowl. Add remaining ingredients
  and cream with a heavy wooden spoon until smooth. 2. Transfer to a
  round or oblong platter and with hands pat out flat, leaving a higher
  rim around edge. Refrigerate until chilled. 3. When ready to serve,
  fill center with strawberry preserves if desired.
