      Title: Roasted peppers with mozzarella & basil

      Yield: 2 Servings
 
      1 lg Peppers
      1 tb Olive oil
    2/3    Cloves of Garlic
    1/3 ts Balsamic Vinegar
     50 g  Mozzarella Cheese
      2 lg Basil leaves
           Seasoning
 
  1. Preheat the oven to 220C/425F/Gas 7. Brush the halved and seeded
     peppers with oil inside and out. Place on a baking sheet and bake
  for
     10 minutes. Turn over and bake for 10 minutes more, until the
  skins are
     lightly charred.
  
  2. Combine the remaining oil, garlic and vinegar, pour over the cooked
     peppers an dcool.
  
  3. Just before serving, place the mozarella and a basil leave into
  each
     pepper half and season.
  
  Per serving: 153 calories
       13 g  fat (high)
      4.5 g  saturated at (high) no added sugar Fibre 1g (low) Salt
     1.06 g  (high)
