Roasted Garlic Potatoes

      Title: Roasted garlic potatoes
      Yield: 4 Servings
      2 lb Baking potatoes, peeled and
      1 tb Peanut oil
      8    Whole cloves garlic, peeled
           Leaves from 1 small bunch
           Fresh thyme (3 or 4 sprigs),
    1/4 c  Heavy cream
           Juice of 1 lemon
      3 tb Unsalted butter
           Salt to taste
  Preheat oven to 350 degree.
  In a medium saucepan, cover potatoes with cold water and bring to a
  boil. Cook for about 20 minutes or until soft. Drain and place in
  large bowl of an electric mixer.
  In a small ovenproof saute pan, heat oil and lightly brown whole
  garlic cloves over medium heat. Place pan with garlic in preheated
  350 degree oven and roast for about 12 minutes or until garlic is
  soft. Turn garlic occasionally and do not burn.
  Place garlic in a blender or food processor with thyme, cream, and
  lemon juice. Blend until smooth.
  Beat potatoes with electric mixer. Add roasted garlic mixture and beat
  until smooth. Add butter and season to taste with salt. Keep warm.
