Title: Honeyed carrots
Yield: 4 Servings
2 lb Carrots (12 to 16 medium),
Scraped and sliced into
1/2 -inch rounds
1/4 c Orange juice
1/4 c Honey
4 tb Margarine or butter
Salt to taste
Combine all of the ingredients in a heavy saucepan and add 2
tablespoons of water. Cover and cook over very low heat for about 25
minutes, until the carrots are tender and the liquid is syrupy.
