    1/2 c  Low sodium soy sauce
    1/4 c  Cooking mirin (rice wine)
    1/2 c  Water
      1 oz Shredded fresh ginger
      1 oz Sliced onion
      1 oz Sliced celery
      1 oz Shredded carrot
      1 ds Sesame oil
      2 tb Unsalted butter
  Combine all ingredients except butter in saucepan. Boil for about 10
  to 15 minutes to reduce the sauce, or until 2/3 cup of sauce remains.
  Add butter, stirring until melted.
