Title: Herbed couscous
Yield: 4 Servings
2 c Couscous
2 c Water
1 tb Butter
Salt and pepper
1/2 bn Scallion, finely sliced
1/4 c Fine diced Spanish onion
1 To 2 tablespoons rice wine
Bring water, 1 tablespoon salt, and butter to a boil. Add couscous,
remove from heat and stir quickly and thoroughly. Cover for 5
minutes. Moisture will be absorbed. Fluff with a fork. Add scallions,
Spanish onion and rice wine vinegar.
Yield: 4 servings
