3 c Distilled white vinegar
1 c Water
2 1/2 c Sugar
1/4 c Salt
1 1/2 ts Whole allspice
1 (3-inch) cinnamon stick
1 1/2 ts Celery seeds
1 1/2 ts Mustard seeds
1 1/2 ts Whole black pepper corns
Place all of the ingredients in a nonreactive saucepan, over high
heat. Bring the mixture to a boil, reduce heat to medium and simmer
for 30 minutes. Remove from the heat and cool completely. Strain the
liquid and store in an airtight container. Yield: about 1 quart
