      Title: Curried carrot soup
 Categories: Soups, Curry
      Yield: 6 servings
 
      1 tb Butter or margarine
      1    Bell pepper chopped
     12    Carrots , thinly sliced
    1/2 c  Water
      1 tb Sugar (optional)
      3 tb Butter
      2 tb Flour
      2 c  Chicken stock
      2 c  Milk
           Salt and pepper to taste
      1 ds Curry (optional)
    1/2 c  Whipping cream
 
  Melt one tablespoon butter in a large skillet. Add pepper and carrots
  and cook, stirring occasionally for 5 minutes. Add water and sugar,
  cover and cook for 20 minutes.
  
  Meanwhile, melt 3 tablespoons butter in a large saucepan over low
  heat. Add flour and cook for 3 minutes. Whisk in the warm chicken
  stock, then the milk. Add the carrot mixture, salt, pepper and curry.
  Bring to a boil, stirring constantly. Reduce to a simmer and simmer
  for 30 minutes. Puree in a blender or food processor until smooth.
  Stir in just enough cream to richen. Can be served hot or cold.
