Title: Swiss broccoli soup
Yield: 8 servings
5 1/2 c Whole milk
10 oz Frozen chopped broccoli, or
1 1/2 c Chopped fresh broccoli
3 tb Chopped onion
2 tb Butter
1 tb Flour
2 c Grated Swiss cheese
1/4 ts Salt
Heat milk in large saucepan until simmering. Cook broccoli and
onions in milk until tender. Melt butter in small saucepan. Stir in
flour. Add butter-flour mixture to milk. Cook and stir 3 minutes.
Remove from heat and add grated cheese and salt. Stir until cheese is
melted. Serve immediately.
