10 oz Canned diced tomatoes with
-green chiles
1/2 c Scallions; sliced
1 Clove garlic; minced
1 ts Beef bouillon granules
1 ts Italian herb seasoning;
-crushed
1 c Tomato sauce
3/4 lb Lamb shoulder; cut into 3/4
-inch cubes
1 md Zucchini; halved lengthwise
-and sliced
1 lb Canned Great Northern beans;
-drained
Prep: 10 min, Cook: 15 min.
Combine all ingredients, except zucchini and beans, in a microwave
casserole. Cover and microwave on high 3 minutes. Remove cover and
stir. Continue to microwave another 4 minutes. Stir in zucchini and
beans and microwave another 6-7 minutes, until meat is cooked
throughout.
