      2 lb Ricotta cheese
      2 c  Mozzarella cheese; grated
      1 c  Parmasean cheese; grated
      2    Large egg yolks
  1 1/2 tb Fresh garlic; minced
      1 tb Dry oregano
      1 tb Dry basil
           To Taste kosher salt
           To Taste black pepper
 
  1. Combine all ingredients.
  
  VARIATIONS:
  
  ***add 20 ounces of frozen spinach, well wrung out.
  
  ***add 1 cup finely chopped proscuitto
  
  ***add 1/2 cup chopped, cooked pancetta or hot ham
  
  *** substitute different herbs
