1 cn Black beans, drained and
-rinsed (can use othet
-types, I like black eyed
-peas also) (up to 2)
1 cn Mexicali corn or regular
-corn kernels
1 Jar your favorite salsa
Fresh cilantro
Fresh lime
Cumin
Drain and rinse corn and beans and combine. Add about 1 cup of
salsa, more or less depending on how runny you like it. Mix in about
2 tablespoons of chopped cilantro, juice of one lime, and probably a
teaspoon of cumin. Chill, and eat as a side dish, or use as a dip
with baked chips. This is always a hit, and the spices and ratios
can be adapted to whatever you have on hand. you can also had some
chopped onion or green pepper, or some jalapenos if you like. Posted
