Title: Broccoli green rice casserole
Yield: 4 Servings
1 pk (10-oz) frozen chooped
3/4 c Chopped onion
2 tb Butter
4 lg Eggs; beaten
2 c Milk
1 1/2 c Grated sharp cheddar cheese
1 c Cooked rice
1/4 c Chopped canned green chilie
1 Jar (2-oz) pimentos; chopped
1 1/4 ts Salt
1/2 ts Worcestershire sauce
Preheat oven to 350 degrees. Rinse broccoli with hot water to
separate; drain well. Saute onion and broccoli in butter until onion
is tender. Combine with eggs and milk. Stir in cheese, rice, chilies,
pimentos, salt and Worcestershire sauce.
Turn into a greased 8-inch-square (2 qt) baking dish. Set in shallow
pan of hot water. Bake about 40 minutes, until set in center.
