Title: Broiled pineapple with cinnamon and rum
Yield: 4 Servings
1 Ripe pineapple, peeled,
-cored, sliced 1" thick
1 c Brown sugar
1 ts Ground cinnamon
1/2 ts Pure vanilla extract
1/2 c Meyers's dark rum
Place the pinapple slices in a baking pan that will fit under the
broiler. Combine the sugar, cinnamon, and cloves and sprinkle over
the pinapple. Broil until tender and somewhat caramelized.
Remove the pineapple to a serving platter. Combine the vanilla and
rum and pour into the pan over low heat, on top of the stove,
loosening any brown bits with a spoon. Pour the rum syrup over the
pineapple. Serve warm.
