      Title: Candied yam with coconut
 Categories: Potatoes
      Yield: 4 Servings
 
      3 md Louisiana yams
    1/3 c  Brown sugar; firmly packed
    1/2 c  Hot water
    1/4 ts Salt
      3 tb Butter or margarine; melted
    1/4 c  Coconut; shredded
 
  Cook yams in skins until nearly tender. Peel and halve. Arrange in
  greased shallow 1-quart baking pan. Combine sugar, water, salt, and
  butter; pour over yams. Bake in moderate oven (350 degrees) 15
  minutes, basting occasionally. Sprinkle top with coconut; bake 10
  minutes longer, or until lightly browned.
