Title: Candied yams-citrus and spice
Yield: 6 Servings
2 c Sugar
3/4 c Water
3 tb Butter or margarine
1/2 ts Grated orange rind
1/2 ts Grated lemon rind
3 Sticks cinnamon
1/4 ts Nutmeg
6 md Louisiana yams; fresh or
-canned, cooked, peeled &
6 Lemon slices
1 sm Apple; cored & sliced
Combine sugar, water, butter or margarine, rinds, cinnamon and
nutmeg. Heat to boiling point over medium heat; cook 5 minutes.
Meanwhile, arrange yams, lemon slices and apple in a 1 1/2-quart
casserole. Pour syrup mixture over other ingredients. Bake in
moderate oven (350 degrees) for 30 minutes, basting occasionally with
