Title: Canned peach fritters
Yield: 4 -5 serving
1 cn (29 oz) sliced peaches
1 c Flour-sifted BEFORE
1/2 ts Salt
1 ts Baking powder
2 Eggs; beaten
1 tb Melted shortening
1/2 c Whole milk
Drain peaches and sprinkle lightly with flour. Sift flour with salt
and baking powder. Add well-beaten eggs, melted shortening and milk.
Mix well. With a long-handles fork, dip fruit into batter. Allow
excess batter to drain off. Lower fruit into hot oil (375) and fry
2-3 minutes or until light brown. Drain on paper towels. Sprinkle
with powdered sugar.
