      Title: Carob peanut butter meringues

      3    Egg whites
    1/4 c  Carob powder
    1/4 c  Peanut butter; (smooth or
           -chunky)
    1/4 c  Honey
 
  A welcome taste diversion for anyone, but particularly good for those
  who cannot handle gluten or grains.
  
  In an electric mixer, beat egg whites until stiff. Add the carob
  powder and beat to incorporate. Beat in the peanut butter and then
  the honey. Preheat oven to 300F Drop the batter by teaspoonfuls on a
  cookie sheet lined with parchment paper or oiled with a mixture of
  liquid lecithin and oil. Bake for 10 to 12 minutes. Yield: 36
  cookies, Approximately 25 calories each.
