1 lg Red pepper, deseeded and
1 lg Yellow pepper, deseeded and
1 Sweet onions, cut into
2 Courgettes, thickly sliced
2 tb Olive oil
2 Cloves garlic, peeled and
Deseed and cut the peppers into pieces, then place in a bowl with the
sweet onion, cut into wedges and the thickly sliced courgettes. Stir
in olive oil and crushed garlic then toss well. Thread the
ingredients onto skewers, and cook on the barbecue for 10-15 minutes
or until the vegetables are just tender.
