      Title: Cheese- and fruit-topped english muffins

      4    Whole wheat English muffins
    3/4 c  Low-fat riotta cheese
           Split and toasted
    1/4 ts Finely shredded lime peel
      2    Kiwi fruit -- sliced or
      2 ts Lime juice
      1 c  Sliced strawberries
      1 tb Sugar
           Or peaches
    1/8 ts Ground nutmeg
 
  * In a small bowl, combine riotta cheese, lime peel, lime juice,
  sugar, and nutmeg.  Spread cheese mixture evenly over toasted muffin
  halves. * Top each muffin half with kiwi fruit slices, strawberry
  slices or peach slices.
