Title: Chicken and shrimp gumbo (creole)

5 lb Stewing hen, cut up
1/2 c Shortening
1 c Chopped onion
1/2 c Chopped fresh parsley
1/2 ts Pepper
2 lb Uncooked shrimp
1/2 c Chopped green onion
3 1/2 ts Salt
1/2 c Flour
2 tb Worcestershire sauce
1 tb Lemon juice
1/2 ts Thyme
1/2 c Chopped celery
1 ts File powder
Sprinkle chicken with 1.5 tsp of salt. Melt shortening in a large
heavy pot. Add chicken pieces; brown, turning on all sides, for
about 15 minutes Remove chicken.
Stir flour into hot fat in wich chicken was browned. Stir
constantly, keeping heat low, until flour is dark brown. Add chopped
