Coconut Frosting Pecans

Yield: 1 Servings
1 c Granulated sugar
1/2 cn Evaporated (NOT condensed)
-milk (reg. size can)
1/8 lb Margarine (1/2 stick)
2 Egg yolks, slightly beaten
1 ds Salt
1 ts Vanilla flavor
1 c Coconut
1 c Chopped pecans
Place sugar, evaporated milk, salt and vanilla in heavy saucepan.
Stir constantly over medium heat until margarine is melted. Take pan
off heat and remove 1/2 cup of hot milk & sugar mixture and gradually
stir in beaten egg yolks. Return saucepan to medium heat and
gradually stir in egg yolk mixture.
Over medium heat bring to full rolling boil stirring constantly.
Cook for EXACTLY 5 minutes. Remove from heat. Stir in coconut and
pecans. Beat vigorously by hand with a wooden spoon until frosting
reaches spreading consistency.
