Title: Connie's pear chutney

10 c Sliced, firm, ripe pears --
Abt 5 lb.s
1/2 c Finely chopped green pepper
1 1/2 c Seedless raisins
4 c Sugar
1 c Chopped crystallized ginger
3 c Cider vinegar
1/2 ts Pickling salt
1/2 ts Allspice berries
1/2 ts Whole cloves
3 Cinnamon sticks -- 2" long
Place pears & next 6 ingredients in a saucepan. Tie allspice &
cloves in a cheesecloth bag & add along with cinnamon. Cook slowly
until pears are tender & mixture thick, about 1 hour.
Remove spices. Ladle into clean, hot half-pint jars, leaving 1/2 inch
headspace. Seal. Process for 10 min in a boiling-water bath or steam
canner.
