        3    plum tomatoes -- chopped
      1/2    red onion -- chopped
        1    jalapeno -- seeded and
  :          chopped
        3 TB cilantro -- chopped
  :          Juice of one lime
        1 TB olive oil
  :          Salt and pepper
  
  In a medium bowl combine tomatoes, onion, jalapeno and cilantro. Stir
  in lime juice and olive oil. Season with salt and pepper.
  
  Yield: 1 1/2 cups
