Cornbread Side dish Vegetables

Yield: 4 Servings
2 c Yellow cornmeal
1 c Flour
3 tb Vegetable oil
2 ea Egg
1 1/2 c Milk
1 1/2 ts Salt
2 tb Sugar
1 tb Baking powder
Measure dry ingredients and stir. Add milk, mix well.
Add eggs, beat >> thoroughly. Stir in oil, beat aagain until well
blended. Melt Crisco in heated cast iron skillet (mine measures about
9 inches across the bottom). Pour the batter into the hot pan. Bake
in a 400 degree F. oven about 40 minutes, until top is lightly brown.
