      1    Large papaya
    1/2    Small jalapeno pepper
    1/4 c  Diced red onion
    1/3 c  Diced yellow or red pepper
      1 tb Lime juice
      1 tb Minced fresh coriander
 
  Dice papaya and minced jalapeno pepper. Combine and toss with
  remaining ingredients. Make 3 cups goes great with grilled or broiled
  meats, fish or chicken.
