      Title: Spicy tofu-bell pepper supreme
 Categories: Vegetarian, Main dish
      Yield: 2 Servings
 
      2 tb Olive oil, extra virgin OR
      2 tb Vegetable stock
  1 1/2 c  Bell peppers, mixed green
           -and red; diced
    3/4 c  Onions, yellow; cubed
  1 1/4 c  Salsa, tomato mild
    1/2 c  Olives, black; pitted
  1 1/2 c  Garbanzo beans, canned;
           -drained
      1 c  Tofu; baked, cubed
    1/8 ts Salt
    1/8 ts Pepper
 
   Combine the oil, peppers, and onion in a saucepan and cook over high
  heat for 5 to 8 minuts. Reduce the heat and add the remaining
  ingredients. Cook over medium heat for 10 minutes. Serve with Fresh
  Corn Salad or brown rice.
