      Title: Statesborough meatloaf

      Yield: 6 Servings
 
  1 1/2 tb Vegetable oil
      1 md Onion -- chopped
      3 md Garlic cloves -- crushed
      2 lb Lean ground beef
      2 ts Salt
      1 ts Black pepper
      2    Eggs -- beaten
    3/4 c  V-8 juice
    1/2 c  Fresh parsley -- chopped
      1 tb Bottled Caribbean-style
           Sauce such as Hellfire &
           Damnation Hot Sauce
      1 c  Fresh breadcrumbs
 
  Preheat oven to 350~.  Heat the oil in a skillet and saute onion until
  translucent, about 5 mins.  Add garlic and saute one minute. Transfer
  the onion and garlic into a lg. mixing bowl and add the beef, salt,
  black pepper, eggs, juice, parsley, and sauce. Mix well. Oil a
  12"x8"x2" pan and pour in mixture, molding it into a loaf. Sprinkle
  the top w/breadcrumbs and bake for on hour.
