Whipped Potatoes with Extra Virgin Olive Oil and Parmesan Ch

Cooking Time: 20 minutes
Makes: 6 servings

2 1/2 lbs. potatoes, peeled and quartered
3 Tbsp. extra virgin olive oil
1/2 cup buttermilk
1/3 cup freshly grated Parmesan cheese
Salt and pepper to taste

Method:

Boil potatoes until tender. Drain and then mash well. Vigorously whip - can be done with an electric mixer - in 
olive oil and buttermilk. Mix in cheese and season to taste.

Recipes options: Regular milk or light cream could replace the buttermilk.
