A Salad of Romaine, Mandarins, Toasted Almonds and Dried Cranberries
Prep Time: 15 minutes Cooking Time: 12-15 minutes Makes: 4 servings
Ingredients
For the dressing:
* 1/4 cup orange juice
* 2 Tbsp. olive oil
* 1 Tbsp. white wine vinegar
* 1 tsp. honey
* 1 tsp. Dijon mustard
* Salt and pepper to taste
For salad:
* 6 cups chopped romaine
* 3 mandarin oranges, peeled and separated into segments
* 1/3 cup almonds, toasted
* 1/4 cup dried cranberries
Method
Combine dressing ingredients in a salad bowl. Toss in romaine and oranges. Arrange on plates. Sprinkle with
toasted almonds and cranberries and serve.
Note: To toast almonds, place in a single layer in baking pan and cook in a 300 degrees F oven until lightly
browned, about 12-15 minutes.
