Aged Cheddar Cheese Shortbread
Prep Time: 20 minutes    Cooking Time: 18-20 mins   Makes: About 40  


    * 1/2 cup butter, at room temperature
    * 200 grams aged cheddar cheese, grated
    * 1 cup all-purpose flour
    * 1/2 tsp. salt
    * 1/8 tsp. cayenne pepper
    * 1/2 tsp. dried thyme
    * 1 large egg white


Place all ingredients in a bowl and mix well to combine. Transfer the dough to a lightly floured surface and 
divide in half. Shape and roll each dough half into a roll that is 1 1/2 inches in diameter. Wrap each roll in 
plastic wrap and chill 2 hours. Place the oven rack in the middle of the oven; preheat the oven to 300 degrees 

Line 2 baking sheets with parchment paper. Unwrap one of the rolls and cut into 1/4 thick slices. Arrange the 
slices on one of the baking sheets, spacing them 2 apart. Bake for 18 to 20 minutes, or until a light golden 
brown. Remove from the oven and cool the shortbread to room temperature on a baking rack. Repeat these steps 
with the remaining roll of unbaked shortbread. Store the shortbread in an airtight container until ready to 

What to serve alongside:

Create a tray of snacks by placing these short bread in a suitable container on a large platter with cheese, 
pate, olives, fruit and preserves.


Try another tangy cheese in this shortbread, such as aged Gouda or provolone. Double this recipe and freeze some 
of the rolls to cut and bake later when you need some savoury bites to serve you guests. Use the shortbread as 
the base for a canape and top with things such as pate, walnuts and red pepper or wine jelly.
